Old Fashioned Peanut Brittle

A tasty deal with to make and munch on during the holidays.

2 cups sugar
1 cup water
1 cup light corn syrup
three cups salted roasted peanuts
three tablespoons butter
1 teaspoon baking soda
eleven/2 teaspoons vanilla extract

Line two baking sheets with parchment paper.

Stir first 3 ingredients in heavy huge saucepan over medium heat until sugar dissolves. Increase warmth to high and boil with out stirring till sweet thermometer registers 260° F, about 15-25 minutes. Be cautious now not to allow sweet thermometer contact the lowest of the pan.

Reduce heat to medium-low. Mix in peanuts and butter and prepare dinner till thermometer registers 300° F stirring continuously, about 10-12 mins. Add baking soda and vanilla and stir in a timely fashion (combination will foam up).

Immediately pour out onto prepared baking sheets, dividing flippantly. Spread out brittle as thinly as feasible. Let stand till cold and hard. Break brittle into pieces. Store in hermetic boxes at room temperature. (Can be organized 1 month beforehand.)
